First, let me say that I'm not a big Crete player, so I can't help you there, although I'd imagine Sparabara are pretty epic in that mode. :)
Persia is probably my favorite faction (Celts are a close second). They have so many options, and don't feel weak in many areas. Their biggest strengths lie in their diverse Cavalry options, as well as in the Immortals. Their weaknesses lie in their siege capabilities (lack of a ballista counterpart can cause issues in PvE) and their Barracks units, which, while good, don't excel when compared to Greece and the Celts (can't honestly speak for Egypt).
Here, let me lay it out for ya. Please note that all of this comes from my experience, and others may disagree of differ based on playstyle and gear.
Barracks:
Sparabara: These guys are awesome. They can be geared to fill a large variety of roles due to their excellent baseline stats. They can be made to perform as powerful early game tanks, tough-as-nails raiders, or anything in-between. I personally gear them towards survivability and use them to fend of early assaults. When not using Immortals or Cavalry, these guys are your best bet to tank for your ranged units, and they synchronize quite well with Takabara in my experience.
Spearmen: Nothing special here. They're a little tougher than the other three Spearmen, but only excel against Cavalry. Too situational to recommend.
Archery Range:
Bowman: These guys are great, and will be a staple of many strategies. They have good range, damage and health, and synchronize quite well with a lot of units, particularly Asabara. Unless your going for a pure Immortal army, or want to enjoy the speed of your cavalry, you should always be fielding these guys.
Takabara: These guys are... technically functional. I have found their best use is to mix them in with Sparabara (or Immortals, if your so inclined and can handle the associated micro), as a DPS boost. Overall, not a bad unit, just nothing special. It should be noted that these guys should always have backup, as they are just too flimsy to go it alone.
Stables:
Asabara: I can't even begin to explain how awesome these guys are. Relatively cheap, fast, durable and with decent DPS, Asabara are easily one of Persia's greatest strengths. Use them as raiders, flankers, or tanks for your ranged units (especially bowman). You should build these guys in most matches, if only because their utility simply cannot be matched. Their only real weaknesses comes in the form of siege and anti-cavalry cavalry (Horseman, Prodromos, etc...). Just a great unit.
Mounted Archer: This unit is alright, but it seems to be a more PvP focused unit in general. It works really well as backup for an Asabara focused cavalry force, and their anti-cav damage can be very useful. If your going for a cavalry focused army, by all means, bring them.
Cataphract: These guys are something special. When fielding them, you will almost have to plan your entire strategy around it, due to their brutal price tag. However, with proper support, they just demolish the opposition. They're just fast enough that you can field them with your other cavalry, but just slow enough to tank for your siege units. It takes a while to learn how to use them correctly, as they're a tad squishier than you would think, but once you get a handle on them, they absolutely dominate.
Siege Workshop:
Battering Ram: Just a Battering Ram. It may look really cool, but there's nothing special about it. Use when you'd like, otherwise, stick with Palintonins.
War Wagons: These are a fun unit, and another one whose role, like the Sparabara's, really depends on how you gear it. Give it enough range, and it can function as a substitute for your missing Ballista unit, give it enough damage, and it works really well as support for an infantry force (particularly Immortals). I have found that is almost never hurts to bring a few (unless your going cavalry), as their AOE damage can be really useful. Like the Cataphract and Sparabara, practice with these guys will eventually reveal your best usage for them, and you should gear them towards that end.
Immortal Camp:
Immortals: These guys are the Lord's gift to Persia. They are often the only unit you will need to win a battle, and while they benefit from the support of other units, they in no way need it. They have a natural tendency to split up into groups of tanks and archers that makes using them a breeze (and a blast). The Immortals are arguably your bread and butter unit, however they do suffer from the same issue of the Cataphract in that your strategy often needs to be geared towards them.
War Academy:
Magus: These guys might be the best conversion priests in the game once they're upgraded. I always take a few to support an Infantry or Immortal based force, as they can heal out of combat, as well as convert at a ridiculously fast rate.
Fortress: This section pertains to the Advisor units (and Palintonin). No advisor unit is necessary, but read on of you have an inclination towards using them. :)
Kardaka: These guys are arguably Persia's best advisor unit, as they make a full infantry force viable without forcing the need to field Immortals. They also serve to fill a missing niche for Persia in the form of a primary infantry unit akin to the Hoplite or Champion that can break an enemies base (again, ignoring the usage of Immortals). They are a tad squishier than Somotophylaxes though.
Royal Guard: Essentially Spearmen. As an advisor unit. I honestly cannot justify ever using this units, although they do look kinda cool. Maybe use them as emergency anti-cav, since they build so fast?
Scythian Horse Archer: These units are actually really good, and when mixed in with Mounted Archers make a formidable force. If your gearing primarily towards cavalry over infantry, I would take these guys. They're also a bit faster than Mounted Archers, which is nice for raiding purposes.
Royal Archer: These guys are nice, but they suffer from the same issue as the Guard in that their role overlaps with a currently existing Persian unit, in this case the Bowman. However, seeing that said role isn't quite so situational, and that these guys build really fast, I can see a usage for them.
Scythian Chariot Archer: Ok, these guys just look cool. While not a bad unit in terms of stats, they are statistically mediocre. I still take them to support my Cataphracts though, just because they look so freaking cool.
Palintonin: A standard Palintonin, great for defense, good for offense. Nothing special to say except that they look really funky.
